Pebre (Chilean Cilantro Salsa)

1/3 cup minced onions or scallions
1/2 cup fresh cilantro finely chopped
4 med tomatoes finely chopped
2 tbs hot sauce (such as Tabasco)
(2 Tbs vegetable oil optional)
1 tbs vinegar
1 tbs fresh lemon juice
1 x garlic clove minced
salt and pepper
Method :
* Mix all of the ingredients together in a medium bowl and refrigerate. (If using onions instead of scallions, you may want to minimize their “bite”. Sprinkle them with salt and let sit for a few minutes. Then press them gently in a sieve and rinse well in running water.)
