Ingredients

* 1 1/2 Cups Lentils
* 4 Cups Chicken Broth
* Salt And Pepper — To Taste
* 1 Teaspoon Olive Oil
* 1/2 Pound Chorizo — Chopped
* 1 Medium Onion — Chopped
* 1 Medium Carrot — Chopped
* 1 Medium Jalapeno — Chopped
* 2 Cloves Garlic — Chopped
* 1 Teaspoon Paprika
* 1/2 Teaspoon Cumin
* 1 Teaspoon Oregano
* 1/2 Cup Rice
* 1 Tablespoon Parsley — Chopped
* 2 Medium Hard-Boiled Egg — Chopped (Optional)

Directions

Bring lentils and broth to a boil. Season with salt and pepper. Simmer for 15 minutes. Saute chorizo, onion and carrot in oil for 3 minutes. Add garlic, jalapeno, paprika, cumin and oregano. Season with salt and pepper. Simmer for 1 minute. Stir the onion mixture into the lentils. Add rice and simmer for 20 minutes. Place in serving bowls, sprinkle with parsley and egg. Serve.
