Ingredients

* 4 Medium Potato — Cubed
* Salt And Pepper — To Taste
* 1/2 Cup Peas
* 1/2 Cup French-Style Green Beans
* 1 Medium Acorn Squash — Cubed
* 1 Medium Jalapeno — Chopped
* 2 Tablespoons Olive Oil
* 1 Teaspoon Paprika
* 1 Medium Onion — Chopped
* 1 Can Tomatoes — Chopped
* 1 Cup Corn
* 1/2 Pound Chariqui Or Dried Beef
* 1 Teaspoon Parsley — Chopped
* 4 Cups Chicken Broth

Directions

Boil potatoes in broth for 10 minutes. Add peas, beans and squash. Simmer for 10 minutes. Saute jalapeno in oil for 5 minutes. Add paprika and onion and saute for 10 minutes. Add the tomato to the onion mixture and saute for 10 minutes. Add corn and saute for 5 minutes. Add dried beef to the broth and simmer for 5 minutes. Add tomato mixture to the stew, sprinkle with parsley and serve.
