Vanilla, coconut, avocados, peanuts, beans and chocolates are Chilean contribution to the Spanish cuisine. Wine which is an essential beverage in Chile today has been brought in by Spain. Dishes like asado( popularly known as barbecue), Cazueala( meat and potato soup), charquican( mashed potatoes, corn and ground beef), estofado( stew), ave palta(chicken and avocado sandwich), barros jarpa (ham and cheese sandwich), guatita( cow stomach), ensalada chilena( Chilean salad with sliced onions, tomatoes, cilantro, oil and vinegar), manjar blanco( dessert) and prieta (blood and onion sausage) are commonly consumed in Chile. Germany has a great influence on Chilean desserts. Some great desserts include cuchufli( pastry with manjar), cachos( horn shaped pastry), calzone rotos( fried pastry), churro( donut shaped pastry), panqueque( rolled crepe with manjar jam) and mil hojas( multi layer manjar pastry).
The cuisine is divided region wise. Chile has three cuisines, the northern cuisine, the central coastal cuisine which accounts for its delicious sea food and the southern cuisine. Northern Chilean cuisine includes various sumptuous recipes like Tortilla de mariscos, Erizos, Machas a la parmesana; Timbal de quinua, Camarones con salsa and Conchas de camarones. Central Chile cuisine includes humitas and pastel de choclo. Some great southern Chile recipes are the Pastel de pescado and Asado de cordero.
